Sfoglino1, David Widman, will be returning to Vecchia Scuola Bologna (VSB), in Bologna, Italy, to advance his culinary expertise, by completing an apprenticeship, in the spring of 2023.

Specializing, in delicious cuisine created with care and passion, inspired by the fantastic flavours and the history of Bologna, Italy. Please follow the development of my creative adventure, during the spring of 2023, where I will perfect the creation of Sfoglia2, the basis of many of my pasta creations and the pasta typical of Bologna, Italy.

1.-Sfoglino: (sfol-YEE-no) A maker of fresh pasta sheets. (Masculine.)

2.Sfoglia: (sfol-EE-a) A sheet of hand rolled fresh pasta dough.
